Red Lentil curry rich in Fibre

Greetings Hiveans!!! When scrumptious food is laid on table, how could one resist ? Good food for food health.

Let me bring in a special recipe that goes along with rice and wheat breads. Usually it is given to kids from a very young age to boost their immune system. When eating with rice you can mix it with Indian pappad which increases the taste. Here I used red lentil which is rich in fibre.

Here is the recipe.

INGREDIENTS REQUIRED:

  • Red Lentil - 1 small cup
  • Water - 2 cups
  • Garlic - 4 clove
  • Ginger - 1cm in length
  • Green Chilli- 2 or according to spice
  • Turmeric powder - 1/4 tsp
  • Salt - as per taste

For Coconut mixture:

  • Coconut - 1 full cup
  • Water - 1/2 cup
  • Cumin- 1/2 tsp
  • Chilli powder - a pinch
    " Chilli powder - 1/2 tsp (less spicy one)
  • Curry leaves - few leaves

Note : same cup used for measuring lentil to be used for measuring water.

For Spluttering:

  • Coconut oil- 1 tbsp
  • Mustard seed - 1/2 tsp
  • Shallot - 2 (sliced)
  • Dried red chilli - 1 or 2
  • Curry leaves - a handfull

METHOD OF PREPARATION:

STEP - 1

Wash and soak the lentil for 1 hour in water. After an hour, transfer it to a pressure cooker. To it add water, garlic, ginger, green chilli, turmeric powder and salt. Now close the lid and pressure cook. After the first whistle switch it off .
Let it cool and then remove the lid.

STEP - 2

Coarsely grind the coconut along with half a cup of water, cumin, turmeric powder, chilli powder and curry leaves.

STEP - 3

Add this mixture to the cooked lentil and let it boil for 5 minutes in medium flame. Now switch off the flame and keep aside.

STEP - 4

Finally, keep a skillet on low flame. Add coconut oil, once hot add mustard seed, and when it completes spluttering add shallot, dried red chilli and curry leaves to it. And keep it for a minute or two. Now switch off the flame and pour this hot into the cooked lentil. And close the lid. So the flavour retains in the lentil coconut mixture.

Serve it hot hot with rice or wheat bread.
