Greetings dear Hiveans !!! When it comes to veggies, we have a collection of recipes, enjoyed by both young and old. Here in our place, a veggie side dish is compulsory with rice. So, today let me take you to a recioe prepared with spinach tender stem. With a little ingredient you can make a tasty and healthy dish, rich in fibre.
Usually some of them throw this stem, taking only the leaf part. But I assure you this spinach tender stem goes well with plain white rice.
One of the easily available veggie here is the red / green spinach. Dark coloured Spinach is high in fibre. This is nutritious, as well as healthy. Spinach when mixed with lentils turns out to be a wonderful curry for rice or when its just fried with onion or shallots, it becomes a healthy side dish for rice.
INGREDIENTS REQUIRED
- Tender stem of spinach - Around 500 grams chopped
- Onion - 1 big (or) Shallots - Around 10
- Garlic - 1 flake
- Red Chilli - 1
- Red pepper flakes - 1 tsp or as per you spice
- Turmeric - 1/2 tsp
- Salt - 1/2 tsp
For tempering
- Coconut oil- 1 tsp
- Mustard seeds- 1/2 tsp
- Curry leaves - 1 or 2 stems
STEP - 1
Seperate the leaves from the spinach tenderstem and keep aside. Just rinse with some turmeric water and drain of the water.keep them aside.
STEP - 2
slit the stem lengthwise into two halves
Slit the tender stem into two halves if it is thick else, continue to cut into 1 inch length. Same way, chop the Onions, garlic and Chillies.
STEP - 3
Take a pan, first add oil and then temper it with mustard seeds and curry leaves. Saute until it starts to turn brown in colour, now add the turmeric powder, chilli flakes and salt one by one.
Keep sauting and after 2 minutes add the neatly cut tender stem into it. Cover the lid while cooking. Stir inbetween and let it cook for atleast 5 minutes. Now switch of the flame. Keep the lid half open so that its crispiness and freshness is not lost.
Your tender spinach stem is now ready to be served hot, with rice. Enjoy your healthy meal with hot rice.
