Greetings dear Hiveans of the Plant Vegan community. Now-a-days, most of us are conscious about our health, focusing much on healthy food and regular exercise.
So today, I thought why not bring a grèen meal to your table. Most of you should have heard of a spice called fenugreek. While the spice is used for most of the dishes and curries, its dried leaves are used for seasoning and fresh leaves to serve as side dish or a main course dish in our meals.
On medicinal side, fenugreek helps to control sugar level in our body, to a certain extent. Here is a simple recipe with fenugreek. An easy rice recipe.
INGRDIENTS REQUIRED
- Fenugreek leaves - a bunch
- Onion - 1 medium sized
- Tomatoes - 2 medium sized
- Garlic - 2 or 3 cloves
- Chillies - as per your spice (optional)
- Turmeric - 1/4 tsp
- Coriander powder - 1 tsp
- Long grain Rice - 300 gm.
- Salt - as per your requirement
Method of preparation:
STEP - 1
Take a bunch of fenugreek leaf, wash them thoroughly in water. And drain them atleast for an hour.
Tip: please add a little salt or turmeric while washing the leaf. They say it kills the germs, if any.
STEP - 2
Cook rice with a little salt and keep aside. And now, chop the garlic, Onion, greenchilli and Tomato. Place a large pan in stove for cooking. Large pan is required to so as to add both rice and the leaf together. Mixing them well is another process, for which a large pan helps.
STEP - 3
Once the pan gets heated add garlic and saute for 2 minutes. Carry out all these process in medium flame. Later add the onions, greenchillies and turmeric and once again saute for few minutes until it becomes translucent. Now, its time to add tomatoes and coriander powder.
STEP - 4
Once the tomatoes and onions gets into a gravy form , its time to add the leaves. But, make sure, the leaves don't cook more than a time period of 3-4 minutes.
Note - If the leaves are cooked for a longer period, the taste and aroma is lost.

STEP - 5
Once done it is time to add the rice. Add the rice and leaf gravy together and mix well in a low flame for 2 or 3 minutes.
Finally, switch off the flame. Your rice is ready to be served hot hot....with Indian pappads and vegetable salad mixed with curd. If required, pickles also go well with this food.
