Super interesting article, Steve! I also like to look into how to improve health by making better choices.

Oil, cooking fat is such a difficult one. It really seems to come and go what the 'best' choice is. Not too long ago I did try out sunflower oil for the higher cooking temperature and it was okay but, really, my cooking is 99.9 % olive oil, extra virgin olive oil based. But I will admit that frying in butter is - special. It really is. But animal fat is bad for cholesterol and hubby has bad cholesterol genetically. So, olive oil it is. We still have butter here because I switched to butter (from margerine) - oh - twentyfive years ago or so. Less processed = better.

Have you tried making mayonnaise yourself? It is not too difficult. The main thing is that all ingredients need to have room temperature. What is also great is a cashew nut mayo or avocado - so many possibilities!

Please post more about this, I'm really interested in hearing more.

It really is a difficult one and like you I was using olive 🫒 oil to fry. However one of my healthy friends mentioned I should switch to avocado (she is vegetarian) but still didn't try avocado oil yet.

I know what you mean about cholesterol and using butter. It does make things taste good though.

That's a good idea with mayonnaise, I am sure some healthy homemade variations would be really nice and I might give that a try along with some hummus.

Yes, hummus is also easy to make at home, as are so many things but they take one ingredient that nobody seems to have - time.

I think I'm done trying different oils and will just stick to nice virgin or extra virgin olive oil.

Exactly 🤣 more time would be great. I agree with the oil too.i will just try to find a good olive oil 🫒 dealer.
