Summer Food
I'm not really too sure what I'd eat during the summertime, and not eat in the winter. But, today for lunch I had something I hadn't had in awhile and decided to share it for this post because it was really nice and simple.
Today being Father's Day, we all went down for a coffee and a bit of a stroll, Kaleb was walking around on his reins, and by the time we got back to the house he was asleep and I decided to make some lunch for Aimee, myself, my dad, and sister.
We decided to have some boiled egg on toast, which was fairly handy to make for everyone.
I grilled the toast, because there were 8 slices needed, and I put the eggs on the boil until the toast was ready and buttered.
The eggs were cooked just right and were pretty runny. With a bit of salt and plenty of black pepper they were ready to eat.
I don't really like hardboiled eggs, and I was delighted when I scooped them out to see the consistency that they were.
I decided to mash them up a bit so they could cover the toast a bit more evenly, and then I went out into the garden to eat them in the sun.
It was nice having them outside, and also it is a fairly light meal, but also filling. It's quick - less than 10 minutes - and it never leaves me feeling sluggish or lethargic, which is the exact type of food you need on a relatively warm day, especially if you want to comfortably get on with stuff, and be active.
Drinks
I've said it before, and I'll say it again. Pina Colada's are my favourite drink, in general, I'd gladly take one over a pint any day.
Some white rum, coconut milk, tropical/pineapple juice, and a bit of ice. It's a relatively simple drink to make, and it tastes great. It is not only refreshing, but it also has a nice kick.
When I was over in Tenerife I hopped off these things, and also tested the waters with some other cocktails, but found myself coming back to this each day. I like rum anyway, so it's a win-win for me.
My mum usually makes a batch of these for family gatherings, and they always go down well; they're usually the first drink gone as the get-together starts.
Also, it kind of tastes like summer, however, it doesn't stop me from drinking them in the winter time too.
