Let's try something, try to make it, cook it and also taste it and eat it. That's what cooking is all about, right? And with something delicious that everyone likes: Pizza!
But this time, it's not a real pizza, it's a variant, healthier and I would almost say experimental. Why? Because we have changed some ingredients, the base actually, and we have made another recipe.
It is a buckwheat pizza, and the main ingredient is smoked salmon. Something different and of course more original, will we get it? Well, I'm making a spoiler! with the photo, because that's what the result was like, different consistency of dough, different ingredients but it was good and tasty.
Ingredients + Preparation
We return to the question of ingredients, the dough can be simple with normal wheat, but it has gluten which they say is not so healthy... so we tried buckwheat flour, which is a pseudo-cereal that does not have gluten but It is more complicated to handle.
To give it elasticity we add psyllium power (search on Internet), which comes from a plant, and otherwise, it is easier, salt (pink Himalayan salt this time), one egg and some water.
Ah, an important point is that other times I added yeast as usual, but the dough of this type of flour was very hard, otherwise it fermented for a long time, so I improvised and experimented, taking a risk and I think I was right: I replaced the yeast with a pinch of baking soda. And magically, the dough takes on a softer, fluffier texture that's easier to eat.
And we don't forget the rest of the ingredients that will go on top, the tomato sauce (homemade cooked previously), smoked salmon, grated cheese (emmental for gratin and mozzarella), and a pinch of oregano of course.
Step by step
We begin, and we start with the dough, we mix the ingredients, the flour with water, we stir, and we add the psyllium, the salt, the egg, and the baking soda. And we stir until we achieve a manageable dough, which we spread in a large clay dish. While the oven preheats for about 10 minutes!
Pizzas are round, I know, but this rectangular shape was more practical for the oven, and by making it in a clay instrument, it also has another different and more homemade touch.
And while the oven is heating up, it is time to add the rest of the ingredients, starting with the tomato sauce that covers the entire base, then all the cheese, then the ingredients that we want, in this case the smoked salmon in pieces, but it can be salami or ham, whatever you want, and sprinkle with oregano.
It's time to bake, here the question depends on each appliance, I set it at about 180º (Celsius) for about 25 minutes, but you have to keep an eye on the oven window to achieve the melting point of the cheese that we like the most.
The Yummy Moment
All we have to do is wait and smell, because immediately the delicious aroma fills everything, it starts to make us hungry. It's curious how the smoked salmon looks (and tastes) like grilled salmon, so good really.
Then we carefully (with those oven gloves) remove the tray from the oven, we observe, we smell and all that remains is to cut and eat the pizza!
As you can see, it is not a pizza, at least as we know it, the kind we order to be brought home, oily and with many ingredients. It is a different, original and homemade pizza with healthier ingredients to enjoy more, eat something good by experimenting with different things, and tried, because in the kitchen you have to try and taste.
