Foie gras from goose liver is just a replacement for the more expensive and refined duck liver, a kind of import substitution lol, the liver is larger and can be sold more :)

It's easy to get confused in all this, the thing is that they talk about goose liver more often so that the buyer, or the restaurant customer, forgets about duck liver, and would pay the same for goose liver :)
