This is one of the oldest traditional recipe and is popularly called as unniyappam in my state. Its a famous evening snack prepared with limited items.. Trust me its a tasty one, enjoyed by people of all generation. Most of the expatriates leaving our state carry packets of this item with them, to share with relatives and friends. Its a mouth watering sweet dish.

The main aroma of this item is the small grated coconut and the sesame seed.

INGREDIENTS REQUIRED

  • Raw rice - 1 cup (tea cup)
  • Jaggery - 1/4 kg
  • Banana - 2 (ripe ones)
  • All purpose four - 1 tbsp
  • Salt - a pinch
  • Water - 1/2 a glass
  • Cardamom - 4 Nos.
  • Sesame seed - 1 tsp

PREPARATION METHOD

STEP - 1

Take a cup of raw rice and soak it in water for 4 hrs. After the said time drain it and keep aside.

STEP - 2

In the meantime, put the jaggery in a thick bottomed vessel along with 1/2 a glass of water and let it boil at medium flame, until the jaggery melts and start thickening. When it starts to thicken, switch of the flame. Keep it aside and let it cool.

Note: Do not wait for one string consistency .

STEP - 3

Take a mixer jar and put the raw rice, into it. Now pour little jaggery to the raw rice for grinding. Also, , add the two bananas and a table spoon of all purpose flour.. The dissolved jaggery should be added little by little to mixer while grinding these ingredients . Grind them to a smooth paste.

The batter should be a little thick. Once done, keep it aside for another 4hrs. This is to get a little sour and sweet taste.

Note : To balance the sweetness, a pinch of salt can be added.

STEP - 4

Now let us take the vessel specially designed for making unniyappam. The vessel is made in such way, that it has around seven thick bottomed holes(closed) in which you can pour the batter.

Keep this vessel on the stove and heat it. In the meantime, add the sliced coconut pieces and seaame to the batter. Pour some coconut oil or cooking oil into each holes. Once hot, reduce the flame to low and start pouring the batter into each holes. When the colour changes, turn them, so that the other side gets cooked.

It will become brown in colour, which means its ready to be served.
