This might be for 2 servings but I couldn't stop myself and ate it all! So if you are making it for a party or friends I recommend you double or even triple the recipe ingredients 🙈
● 1 medium cauliflower (mine weighed 700g.)
● 200 ml. unsweetened plant-based milk (I used almond)
● 1 teaspoon of apple cider vinegar
● 80 g. wheat flour
● 1 teaspoon of ground sweet paprika
● 1 teaspoon of onion powder
● 1 teaspoon of garlic powder
● 1 teaspoon of salt
● 2 teaspoons of melted coconut oil (30 ml.)
● For serving: barbecue or other sauce of choice
Preparation
- Preheat the oven to 190 degrees Celsius. Line the baking tray with baking paper.
- Cut the cauliflower or break it with your hands into small pieces (into florets, not making them too small) and set aside.
- Mix plant-based milk with apple cider vinegar and set aside.
- Mix flour, onion powder, garlic powder, ground paprika and salt in a separate bowl.
Then pour the milk mixed with vinegar into the flour mixture and mix everything together well.
Also, pour in the melted coconut oil and mix well.
- Cover the cauliflower florets with the mixed batter - you can dip each piece into the batter separately or pour all the cauliflower pieces into the batter and mix carefully so that they are all covered with the batter (I chose this easier approach 😁).
- Arrange the pieces of cauliflower in the baking tray (so that they do not touch each other).
- Bake for 20 minutes.
Then after removing from the oven, turn each piece over and bake for another 20 minutes.
Serve with barbecue or other sauce of your choice.
