I always love cooking, it is one thing that I have control over in life. I can play with the spices and make a dish based on my taste. I have a choice of what not to add and I have a choice of what experiment can I make.

Last night before going live on splinterlands TV 😶‍🌫️, I rushed to the kitchen and prepared our dinner. It's a sweet and sour fish fillet. I know I prepared this already on the weekends, but I just love its flavor and I am still trying out different techniques to fully master it.

I still used the cold batter strategy in frying my fillets, but this time I mixed cornstarch, flour, and potato starch for the wet batter. The fry was better and the fillets are crispier.

Today I added more rice vinegar to the dish to satisfy the sour aspect of it. I also mixed the pineapple juice into the sauce before pouring it into the fish. Last time my brother gave me feedback that the carrots were a little bit hard, so this time I sautéed them with onions and drenched them with rice vinegar.

I was not able to buy some bell peppers 🫢 but the carrots, onion, and pineapple chunks did all the magic. Bell peppers are an important part of the dish because it adds color to it and gives a different flavor layer to the sweet and sour. Probably next time I go to the market I will stack up some red and green bell peppers.

Overall the dish tastes amazing, adding more rice vinegar did improve the taste. It took me around 30 mins to finish the dish, from mise en place to plating.

My dream

I always stand on this corner of the street while waiting for my girlfriend and for us the ride the jeepney. Across it is a newly built commercial space which I have been dreaming to own. As I stare at these vacant spaces, business ideas are gushing into my mind.

What if I take the risk and put up a barbershop here or maybe a milk tea store there are so many possibilities and opportunities.

One thing that I need to figure out first is where I can get the funds to start. If you have ideas please drop them in the comments. I have always been dreaming of owning my physical store. Hopefully these next years I will be able to achieve them.
