Hi coffee lovers we gonna do something different today.
This is the machine I used on my previous job and man I am in love with this beautiful and powerful machine I was lucky to have worked there and handled this machine.
Name of the machine is La Cimbali M100 ATTIVA
I can't seem to find the exact model online to check on the specification and product manual but if you can find it I appreciate if you would share with me on the comment section below because I suck at finding things haha.

As you can see from the picture above I manually edited it to name the parts of the machine because I notice that no one has done it before if you check on google I can't find it either so I wanna be the first guy who did it and I believe I did YAY!
Start from the left to right of the picture
1 . Steam Control - From my experience there is two types of steam control one is Valve the one shown in the picture and the other one is lever where you pull the lever down to froth the milk and push the lever up to stop the steaming process, you can adjust the intensity of the steam by twist the valve left and right you can choose to steam your milk gently or with full force depends on how you steam the milk to get that perfect silky smooth texture for your milk and to achieve the best latte art on your cup of coffee.

2 . Steam Wand - Steam wand usually located far left or far right of the coffee machine, it is made from stainless steel and it's used for steaming and frothing milk. Steam wand is connected to the boiler, boiler is located inside of the machine to generate steam, steam is released from the small holes of the tip of the steam wand, you need to position the milk pitcher correctly to create the whirlpool while steaming to get that silky smooth milk foam. It takes days, months to years to master the steaming process that is also why some barista get paid higher than the rest.
3 . Shot Buttons - There are 5 buttons on the LED display you can adjust it under the settings button as shown above. The cup icon shown half shot, full shot, double half shot and double full shot but the icons does not matter it's just a guide when you go to settings you can change every single thing what I mean is you can change the temperature, water pressure, amount of water, pre wet time, etc. So it's up to you how you want to set it up.
4 . Group head - Ah the group head my favourite part of the machine this is where magic begins. Usually located in the middle part of the machine and the fundamental component of an espresso machine this is where coffee extraction takes places, coffee ground are inserted to force pressurized water through them to create the famous cup of espresso.
5 . Drip Tray - It's located beneath the group head to make sure no excess water, coffee, or any other spills might occur during brewing process.
It's also making sure your countertop is clean and spotless the only maintenance is you just need to clean it everyday you can remove it and wash with soap and wipe it dry then reassemble it on the coffee machine.
6 . Portafilter - Portafilter it's also known as Filter Holder it function is to hold coffee ground during coffee extraction or the brewing process, it also has a removable basket so you can clean it when you finished using it.
7 . Temperature Display - It's for barista to monitor the temperature of the water that will extract the coffee, why this is important? because everytime you receive coffee beans you need to check a lot of things such as roasting date, type of roast, location, tasting notes, etc with all this information the barista will be able to adjust and monitor what is the best temperature to use to extract the perfect cup of coffee.
8 . Hot Water Spout - In order to release the hot water you need to press the hot water buttons.
9 . Hot Water Buttons - There are 3 buttons of hot water here as you can see from the picture above the reason why is each button has different temperature I just share with you how I do mine. My first button (on the left) its 90 degree with 3 second extraction time the second button (middle button) I set as 95 degree temperature with 5 second hot water extraction time the last button (right button) I set as 100 degree with 60 second extraction (maximum time) you can set this however you like by using the settings button.
10 . Water Pressure - Water Pressure on an espresso machine just to show you the force of which pressurized water goes through the coffee bed. The ideal force is 8 to 9 bar this is also important to get the best taste of espresso you can try with lower pressure by going to the settings menu and change it to 5 or 6 bar and taste the difference yourself. Experimenting on things yourself makes you truly understand why small things like this can effect the quality of your espresso.
11 . Settings - The settings oh man where do I start? You basically can change everything possible for this machine from turning on or off the lights behind the machine or under the group head, you can dim the lights as well, change the temperature on each group head so you can extract on both group head with different temperature, different water pressure, different prewet time, etc. play around with this button and find as many things as possible to understand the machine further you will be surprised.
