When I was a child, I didn't want to eat tortang talong or any dish with eggplant. because I don't like eating vegetables that have small seeds inside. But when I tasted the tortang talong when I was about 22 years old, I can say that eggplant is delicious, especially if it is fried too. You can dip it in soy sauce mixed with calamansi and chili.
Reading your blog makes me crave and cook that dish now, but we don't have eggplant stock today. Sad :<
