For those who might not know, ampalaya (bitter melon) might seem intimidating at first with its bitter taste, but when cooked right, it’s a delightful explosion of flavors. The alamang (shrimp paste) adds a savory kick that balances the bitterness perfectly. It’s a dish that’s both nutritious and incredibly tasty.
