Taco Tuesdays ~ Kue Cubit

Hello There

Finally after some weeks, I could welcome you all again on my TACO TUESDAYS post. I try to deliver something uncommon today as my topic, which is a local cake here. So this time is not something that is good for lunch or dinner, but more like a cake that is good as snacks.

The cake is call as Kue Cubit. Kue is cake in Indonesian and cubit is pinch. The reason why this cake called as pinched cake is because on the beginning, which mean years ago, maybe decades ago, when people start to sell this cake, they used pincers to take them out from the pan.

Anyway I share a youtube video below if you curious how this cake is sold. The video itself has no naration however I believe it is one of the most simple can be understood for. Here it is:

Kue cubit is a small cake that sold as street food. Usually they set the stall or sell this cakes near a school, because their main target market are children. I used to buy this cake a lot when I was a small boy too, it was about 3 decades ago LoL.

These cake are famous as street food not only in Indonesia, although it is originated from Indonesia. You can easily find it in other south east asia countries. Basically it consists of wheat, sugar, butte, egg and condensed milk.

Although it is originated from Indonesia, not many people know that actually it is not a native Indonesia food. It is an adapted food during Dutch colonization. It is a modification from POFFERTJES, which I believe you all might know it well too. So people here modified POFFERTJES into pinch cake, in order to get a more cheaper and make your stomach full easier.

My Kue Cubit

Recently I keep seeing a kue cubit seller near my office. He is selling from his cart which is a small display attached to his bike. Well it is quite dangerous to have your cart or stall like this, but it is common for small sellers here to keep it simple in one go.

The cart iself divided into two pieces, one part which is more closed is used to fried the cake on the pan. you can see the frier below, it's similar to takoyaki or poffertjes pan. He bakes or fries those cake here then move it onto the other side which is used to display the cake

Below is how the display is looked like. We can see from outside that there are pinch cakes there. He won't stock pilling up there, so when he sees he has quite a stash, he will stop cooking and wait till his stash is at low again.

If you see those cake above, you will easily identified that the right side and the left side are different. The right side is glossy and the left side is a doff one. Ok here the deal, there are some variants of this kue cubit or pinch cakes. Some people even sells kue laba-laba, or Spider cakes, which is actually the same as kue cubit but they add some "legs" on each of the cakes.

so what variants do we have now?

1. Ordinary or Regular Pinch Cake

The doff one, which not glossy, is the regular pinch cake. It is cooked weldone, so they are in a good spongy form. They are not to springy nor having a cripsy form. Let say its like a sponge cake but in small form.

2. Wet Pinch Cake or Half Cooked

Ok this is the glossy one, it is glossy because the top surface reflects the lights. Some people call this one as a wet pinch cake, or in Indonesian: Kue Cubit Basah. Basically it is a medium well cooked, not fully weldone but they leave the top still wet. It is a bit sticky and slimy.

Which One Do I Like?

Personally I prefer the wet one, the sticky slimy part has more sweet taste than the fully cooked one. However some people here do not like wet and watery cake, so they will choose the full cooked one because of the texture.

However I do not recommend you, especially if you are new and never buy this cake, to try the wet one. I buy the wet one if I know who sell it, I mean how he or she cooks it, how clean and hygiene their cart is. There are many health risk if you get something not fully cooked from street food stalls.

Anyway, if you are somewhere in South East Asia, or you plan to visit here and never tries this cake... I suggest atleast you should try one. It is very cheap, one cake is less than 10 cents. Of course, in common sense with that cheap, do not expect something that mind blowing extraordinary...
