I’ll spare your tastebuds durian is the most horrific thing I’ve ever eaten EVER!!!!! Going through culinary school, you try so many items that most people never try. I’m like you, and I’ll try anything. Although it’s not high on my list, I can make a palatable version of beef liver. It was one of my dad’s favorite dishes for some reason. My mom couldn’t even stand the smell of me cooking it…..🤣
The key to it is soaking it in buttermilk the day before and sautéing it in garlic and onions. It chills out the gaminess in it. Now I’m not saying it’s great that way, but it’s the most palatable version I’ve ever had.
Dragonfruit is amazing fresh, jackfruit is ok, rambutan has a very weird texture but is ok, horned melon is fantastic but very hard to find.

I didn't know you'd had culinary training! That must have been a fascinating experience! I've seen two schools of thought on durian, and it's either LOVE or HATE, but no in-between! 😜 Is the "horned melon" the same as "bitter melon" or a different thing?
I served durian to an entire event, they requested it. But there wasn’t one person in the kitchen that could ingest it. I can’t even describe the flavor. I think hot garbage would taste better.
As for horned melon, to me it tasted like a banana with a hint of citrus like a lemon or lime. Tasty to me. Horned melon is different to some, some say cucumber with lemon. It depends on which tastebuds are your dominant ones.
