Recipe For Nigerian Yam Porridge

Yam Porridge is one of my favourite food. Yam which is under the carbohydrates gives me energy and joy especially when is it prepared by me. Porridge yam is very delicious and nutritious.

I went to the market not so early in the morning to buy the yam as every other necessary ingredient is available already at home. These ingredients include:

  • Salt, Seasoning cubes, Pepper, Onions, palm oil and vegetable

After peeling off the back of the yam, cut the yam into equal sizes. Washed them and put into the pot. Add water to cover it for boiling. Do not add anything to it now.

After cooking it for some time, it was almost done (soft for eating). You can do this with a knife or a fork to check it out. Drain some of the water. The remaining water is for property cooking the yam and for Porridge. The more the water you remain, the more the porridge and vice versa.

Put the pot back on fire. Add your pepper (fresh or grounded), salt and seasoning depending on the quality of yam you are cooking. I made use of 1½ table spoon of salt. 2 seasoning cubes (knorr) and 1 spoon of grounded pepper

Add your palm oil to desired quality. Cover the pot and wait for few minutes to cook well. Stir the pot very well. Add your chopped onions and vegetable and stie very well

This allows the oil to distribute evenly throughout the pot and into the yam making a gradient of yellow and white.
Dish out the food and enjoy. Best served when hot
