Kikil Cempokak Stir-fried Tauco
You must be confused about what kikil is, kikil is a processed dish from cow or buffalo skin. Usually cow skin is processed with a long process so that it produces tender and delicious kikil. In my area, kikil is a mainstay menu that is sought after during big events such as weddings. Usually our region slaughters cows, and the gravel is processed as a stir-fried rtauco dish like the one I'm cooking now.
Now in making stir-fry kikil I combine it with cempokak, because in my opinion this eggplant-type vegetable is very tasty and blends very well when combined with both. Especially with a lot of spices that certainly evoke a spicy taste. For those of you who are not spicy lovers I think this is not suitable for you. Because it tastes super spicy and savory with the spices and tauco that I combine.
Ingredients
300 grams of kikil
2 tomatoes
2 tablespoons tauco
5 green chilies
3 cloves shallots
2 cloves of garlic
1 lemongrass stick
2 bay leaves
10 green chili peppers
Cooking Procedure
First I prepare all the ingredients then finely chop the shallots and then cut the tomatoes according to taste.
Then chop the green chilies obliquely here I do with scissors so that the shape is thinner and better.
Cut the garlic into small pieces then prepare the cayenne pepper in a mortar. Add ¼ teaspoon salt then grind coarsely.
Next heat 2 tablespoons of cooking oil, then fry in hot oil shallots and lemongrass and bay leaves.
If it is wilted, add the garlic and cayenne pepper that has been mashed, then add the tomato pieces and also the green chili stir until evenly distributed.
Now next if the chili has started to wilt, add the tauco, here so that it is not too salty I wash the tauco once cuvi and only take the beans.
Prepare the cempokak, mash the cempokak in plastic, until the compokak is split then wash with several rinses.
Add to the wok cempokak earlier, stir until evenly distributed and cook until the cempokak is tender.
Finally add the gravel that has been boiled until tender. Stir until evenly distributed, don't forget to correct the taste, if it's done you can serve it.
Results
The stir-fried kikil tauco with cempokak combination has been served on a serving plate. Make kikil as a side dish to accompany your dinner with warm hot rice at home. Well usually I often make kikil at home with a combination of cempokak like this. I really like kikil processed like this, the spicy savory is very fitting, especially combined with cempokak vegetables which are good for eye health, adding to the enthusiasm I enjoy it.
