I'm happy to share with you all, dear foodies, the new recipe that I've tried.
I found the recipe from a post of a hiver (@marbelis75)
In the post, she uses mainly carrots to cook the recipe that she called "Arroz con zanahoria", I was amazed as seeing it and in the comment I told her that I would try making it someday, and that's what I've done, and I'll show you.
The first thing I did was to look for carrots in the market, because every other ingredients is much easy to get.
Ingredients used:
5 cups of Rice
10 tiny Carrots
Garlic
A ball of onion
Pepper
Seasoning cubes
Vegetable oil
Ginger, garlic, turmeric
Dry fish
Salt
Water
I know that in the original post, marbelis these :
500 grams of white rice
300 ml of water
Spoonful of salt
2 cloves of garlic
Large carrot.
Oil
But my mom told me include the other ingredients that can't be missing in a Nigerian rice especially the onions nand pepper. Well I guess the main thing is to have the carrots, which is our main ingredients hehe.
So I proceeded with the preparation.
* Preparation
- First I washed parboiled the rice. While parboiling I:
- Grated the carrots, slice the onions, pound the ginger, garlic and turmeric, I also pounded the pepper. I also pound the fish

- Next thing I did was heat the oil in the pot and pour the onions with some salt:
- Next i add the carrots to it and stir well
- After that i was simultaneously adding the other ingredients, pepper, ginger garlic turmeric, grated fish, seasoning cubes and stir them. Then I added the rice and water, and stir well.
At this point I cover the pot to wait for the water to dry. It takes about 15 minutes but i always like to manually check it to avoid problems lol.
And soon it was done!
And that was the final presentation just gor posting on hive. I'm glad I was able to make this recipe I learnt , though admittedly with a little twist to it. But it was great, we loved it!
