Hi @jacobtothe, it's quite confusing how words are used differently in various parts of the world.
To us in South Africa, pancakes are more like a crepe. It possibly stems from the Dutch influence - pannenkoeken. Crumpets and flapjacks are the same thing here.
Similarly my confusion when I learnt (learned) that what we call biscuits is cookies in the US, but scones are called biscuits in the US!

Biscuits (US) are less scone and more like what we call an "English muffin." Not sweet, very much more of a hearty bread nugget.

Thank you for clarifying that. I remember a Texan Hiver reviewing a steakhouse and saying they serve the best biscuits and gravy!
I was totally flummoxed.

Hearty biscuits with sausage gravy are definitely a popular item. I didn't care for diner versions even before discovering the dairy allergy. Leftover meat and gravy works well as a home-made way to deal with leftovers, though.

Add a thick white sauce with lots of browned ground pork sausage mixed in and you'll be close. Caloric overload warning!
