Awesome recipe. I love curry in all variations and I like cauliflower and made a lot of recipes with it. Cauliflower rice, Cauliflower curry, Cauliflower baked and the normal cooked way. Your recipe looks very healthy and nutritional. I see a lot of veggies and some protein from the chickpeas.

So true... I do that often. Same with parsley stalk for example. They are a bit harder but when you have recipes like curry or some stew, they are perfect to pot roast with the onions. Also many people throw away the broccoli stalk. You are wasting food if you do so.
