Tell you what... I'm making a Kangkung Crispy (Crispy Water Spinach) for my dinner today. The main ingredients are Water spinach leaves, mixed flours, and seasonings. I just need the leaves because it'll be crispy. The stems won't be crispy 😂.
I use rice flour, wheat flour, and corn starch in a ratio of 6:2:1. I found many recipes. But, I think I'm more for the result of this ratio.
The seasonings? I use candlenuts, coriander, and garlic. Pounce them together and make them soft. After it softens, mix it with egg and coconut cream. I also add some salt and pepper to spice things up for more flavor. Heat up the pan with cooking oil. Leaves go-to flour, give a little dip in seasonings, and fry it up with a sizzling sound of joy 😍.
The result is quite unexpected 😂. Some look great like what I hoped for with less flavor and some look "not crispy" but full of flavors 😂. I know it won't be what I want like the restaurant served me. Well, I learn more than one thing to combine for my next Kangkung crispy. I think it'll be later on when I have time to make it again. But, I'm pretty sure it will be good. My little brothers prefer taste so he takes the mushy one, tho it's not crispy... It's full of flavors 😜. He also tells me the one thing that I forgot to add "Chili Oil!" Yeah, it will be a good one because my family loves spicy food. Chili oil and some cut chili will do for the next one. Sadly, I thought it would be more but it just can only serve for 2 people. It's just for me and my little brother then 😂. I'll need more water spinach too later. The flours are perfect. Dip it with a good amount of seasonings and not too much with more time to fry and voila. It'll be good like a restaurant served me before 😁.
