Hello foodies,
This recipe here No Bake Biscuit Salami, in Romanian called " Salam de biscuiti", means basically a sweet salami with biscuits inside. Funny.
Well, the recipe is a classic here in Romania. My mom has been making this recipe since I was little, back in my childhood. And for the Holidays this is a good recipe to have on the table because it's no time consuming, it can be eaten easily by your guests, without need of cutlery and plates.
Also, it's a recipe pretty much everyone likes and you can't fail with it. Why? Because the ingredients are basic and no fancy. And plus, it looks cool! My honest opinion.
The original recipe has sugar in it and I'll share it with you just the way it is but as a fact, I often (almost everytime) skip the sugar and add triple cacao powder compared with the original recipe. Thats how me and husband like it, no sugar and that intense taste of cacao powder.
Still, the biscuits contain sugar so...it's not like there's no sugar in the recipe version I use to make. I think no sugar at all wouldnt be that great! It would have no taste and where's the fun in that?
Here are the ingredients:
(This is for a portion. I often double the recipe.)
- 500g regular biscuits
- 250g sugar
- 250ml milk
- 250g butter
- 2 Tbsp Cacao powder
- Rum essence
- Crushed walnuts
- Coconut flakes
This is my mom's recipe, from her recipe notebook. I'm sure there are endless recipes on internet but I dont recall trying a different one, only this one.
Many of these recipes contain raisins or turkish delight (jelly).

So, it's funny that this time making this recipe, I really did not have walnuts at home, which is surprising because I ALWAYS have these. They are my fav nuts. Still, I make this recipe many many times in a year round so sometimes I improvize, like this time using almonds instead of walnuts.
BUT the original recipe asks for WALNUTS! I love walnuts more than any nut type.
I use cacao powder min 20% fat.
INSTRUCTIONS
When you're a mom having Small Children, we tend to look into easy-to-make recipes. So this recipe is exactly this: NO TIME consuming! If you have all ingredients at home, max time would be 30 minutes. Or at least this is the time I get normally.
The recipe is super easy.
First, on medium heat, add butter, milk and sugar in a pot and use a whisker to get a nice smooth mix. You can melt the butter first if you'd like to. But there's no need. I always put milk and butter at first, waiting a few minutes until I add sugar and only after,dark cacao.
The milk must be hot, not necessary boiled.
Make sure to wisk continuously to remove any lumps.
I told you I would add at least 5-6 Tbsp of cacao, though in the recipe are mentioned 2 Tbsp. We like the sweet bitter intense flavor of dark cacao. Sometimes I skip the sugar, sometimes I dont, sometimes I only use half the quantity. Still, when it comes to cacao, 2 Tbsp are not enough for me.
Meanwhile, add biscuits in a large pot or a large kitchen bowl. Start mashing the biscuits using a mug or something heavy. Sometimes I use my dough rolling pin to smash the biscuits but I dont like the mess.
Others put biscuits in a LARGE bag and use the dough rolling pin. I did this too. But I prefer using a heavy object directly into a bowl and there's less mess.
Plus, you dont need all biscuits to be flour consistency. You need big chuncks too because if you smash the biscuits too much, you'll get a smoother end result, which is not nice. You want to feel the whole biscuits pieces.

You can start crushing the biscuits first and then do the chocolate sauce. When you're done with both of these (having the biscuits smashed and the chocolate sauce done), pour the chocolate sauce on top of the biscuits. Add rum essence and walnuts. Give it a good stir, until well combined.

Maybe it doesnt look good, but it tastes good. Also the smelllllll ! OMG! Rum and Chocolate! YUMMY!
Now, you only need to assemble this beauty.
I'm telling you, if you'll make it once, you'll fall in love with it.
You'll need kitchen foil and coconut flakes. Here I'll show you in the pictures how simply it is done.

Time to let it in the fridge for a couple of hours. You need the senses to become one and also, the butter must get in shape. It's not good at room temperature. So you'll have to wait a bit until have a bite! Also, keep it in the fridge for a couple of days! Still, it wont take long until will be all gone...mark my words! 😁

And....it's DONE! Thats it!
One final important thing to mention here: when you roll the biscuit salami, be careful to squeeze it tightly, otherwise it won't have a nice shape and it will break when serving.
