Research and Development is always both nerve wrecking and fun at the same time.
And especially in baking, the taste buds need to function well enough to know the optimum taste.
This come when I was asked to try putting additional "glaze" for a "sweet and salty surprise" on every bite, besides the default that is a perfect pair for coffee and tea.
Ah... what can I say? I have sweet tooth customers 🤣
So I started searching out for the right recipe for that "tiny hint of sweetness" addition so that the "less sugar healthy image" won't be totally tarnished.
But something came to me to try an extra step of brave experiment... butterscotch white chocolate... 🤔
Maybe it is the Holy Spirit nudging me
The good thing is that the bakery actually already has butterscotch choc granules, but when I tasted it it was... URGH ... TOO SWEET 😖
And that's where when I attempted to make it a "salted edition" just to even up the overpowering sugar.
The balance to the taste has to be accurate....
And the verdict came out from the Beta testers
Darker skintoned testers who are used to sweets preferred the milk icing glaze
While the yellow skintone testers preferring savoury tastes feel drawn to the salted butterscotch
So in the end, the first customers asked for plain and butterscotch instead haha.
Once Christmas is over, I will start baking.
